During the 1970,  the label of VQPRD (vin de qualité produit dans une région déterminée) was awarded to dry and sweet white wines produced from the varieties of assyrtiko, aidani and athiri in the islands of Thera and Therassia.

Varieties in Santorini include the white asyrtiko (cultivated at a percentage of 80%), the best known variety of the Mediterranean grapevine, and, in smaller quantities, athiri and aidani, along with other local varieties.

Among red grape varieties, mandilaria and mavrotragano are the most prominent. The famous Vinsanto is produced by asyrtiko and aidani, sunned after the harvest and then aged in wooden vats.

The Vinsanto

It is a very exceptional sweet, sun dried wine, complicated and exuberant. This famous, award-winning Santorini wine is being mentioned by foreign travelers on the island since the 19th century. It is produced from very mature white grapes that are dried in the sun for many days, in order to give the concentrated, sweet, wine with the powerful aroma of raisins, dried figs, honey, dried fruits, coffee.

Vinsanto matures for many years in oak barrels and is been aged in bottles for an even longer period of time.

The nykteri

The most traditional Santorini wine is Nykteri. It is produced by all three white grape varieties of the island: the strong assyrtiko, the gentle athiri, and the aromatic aidani. It is luminous, with golden green hues, a fruity flavor, and a rich taste. It was given its name because in the past the whole vinification procedure was carried out during the night, when the temperature was low and there was no sunlight, in order to minimize the risks of oxidization and spoiling of the wine.
